The kransekake, which translates to ” ring cake” or “wreath cake”, is undoubtedly the signature cake of Norway, made for special occasions such as weddings, Christenings, milestone birthdays and of course Christmas.
This impressive tower cake is made from hand-ground almonds, sugar and egg white, and is gluten and dairy free, making it a wonderful and different alternative to standard cake. Kransekake should be crisp and crunchy on the outside, soft and chewy on the inside.
Standard cakes are made from 18 rings, however these can be made into larger 34 ring or smaller 9 or 12 ring cakes.
12-ring Kransekake serves approximately 15 people when paired with other desserts.
18-ring Kransekake serves approximately 30-40 guests when paired with other desserts.
36-ring Kransekake serves approximately 80-100 guests when paired with other desserts.
Norwegian Kransekake differs from Danish Kransekage so if you are Danish and Kransekage is what you’re familiar with please keep this in mind!
Kransekake should never be refrigerated! Your Kransekake can be left as is until you are ready to enjoy, or it can be frozen until needed.
